Dear brothers and sisters,

We are pleased to present this magnificent talk by Anna Maria Clement with the world renowned Hippocrates Institute.

She calls attention to the tragic results of massive deforestation and the uncontrolled use of pesticides. It is shocking to hear that 50,000 species become extinct every year;  by 2050 two thirds of all birds in North America will be gone. Another inexpressible tragedy is the approaching extinction  of bees. So many food crops depend upon pollination by bees including cherries,plums, peaches, nectarines, apples and pears. Here in California, the almond trees are about to blossom; so vital are bees to the crop that they are brought in from all over the United States, a huge operation.

It seems that the life of all species is the common heritage of each one of us.We trust that people will awaken to the tragedy that is unfolding; we are encouraged by the thought that, “mankind never sets itself a problem it can not solve”.

Recipe: Chocolate Persimmon Cheesecake

Creamy and sweet no-bake vegan cheesecake, with the warming notes of persimmon and the smooth taste of chocolate. Gluten-free, grain-free, refined sugar-free.

Ingredients

*Make sure all ingredients are at room temperature before getting started*

Chocolate Crust

  • 1⁄2 cup walnuts
  • 2 soft medjool dates, pitted
  • 1 tbsp raw cacao powder
  • 1 tbsp maple syrup
  • 1 tsp coconut oil
  • 1/ 16 tsp salt

Persimmon Filling

  • 1⁄2 cup raw cashews, pre-soaked and strained**
  • 1 small ripe persimmon (115gr total without the top)***
  • 3 tbsp unsweetened almond milk
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil, melted or softened
  • 1 tsp pure vanilla extract
